Satay chicken skewers recipe

Ingredients
400g diced chicken breast
2 tablespoons rice wine vinegar
tablespoons soy sauce
2 tablespoons honey
2 tablespoons boiling water or chicken stock
4 tablespoons peanut butter
2 cloves of garlic, crushed
2 teaspoons sesame seeds

Method
•Place the chicken breasts in a bowl.
•Combine all of the other ingredients in a separate bowl using the back of a spoon. The peanut butter makes this pretty difficult but stick at it, it'll come together eventually.
•Pour the marinade over the chicken and place in the fridge for a couple of hours.
•Put the chicken onto wooden skewers and cook. You can do this in a frying pan, in the oven, on the grill or on the BBQ. I definitely prefer the BBQ but on cold, miserable days like today, the oven does just fine.

Serve with whatever you fancy! Henry had his lots of different veggies and a few oven chips. He loved it.
