Holiday dilemma

We are off to Spain for a week next month but also looking to book a fortnight away in August. Last night we searched the Internet for hours but we still haven't made a decision. The problem is, we have no idea what we want. Here are the issues we're having...

• Henry will be 11 months. What does an 11 month old even do?! What can they eat by then? How well will he be sleeping? Will he happily sleep in his pushchair on an evening or will he need to be in bed early? Will he be crawling? Walking? All of these things affect where we'll stay, what type of room we need and whether to go self catering or all inclusive.

• Do we want B&B, all inclusive, self catering, half board or full board? Agh way too much choice. On one hand all inclusive is so easy, there's always plenty to eat on the buffet so we're sure to find something for Henry. It also means not needing much spending money. On the other hand do we really want to eat buffet every day and night for 2 weeks? We both love eating out and it's a huge part of going on holiday, discovering new restaurants and enjoying new foods. But what if there are no decent restaurants nearby or what if Henry doesn't like any of the food. 

• Do we want to pay more for a bigger room with a balcony that we can sit at on an evening? Do we want a room with a bigger bed in case Henry needs to come in with us or do we just risk it and just have a travel cot? Will we need air con and a kitchen or do we just need the basics? Sea view? Mountain view? No view? Decisions decisions.

• Where to go. We pretty much decided on Madeira last night, but then discovered that it's VERY hilly and possibly not the most child friendly. We don't need kids' clubs or children's menus or water parks. But we do need people to be accepting that we have a baby with us and he'll be going everywhere that we are. Other options are Spain, Portugal, Canary Islands or Balearics. 

We want a nice, quiet holiday without hundreds of badly behaved children dive bombing in the pool, but somewhere that is baby friendly. We want a nice clean hotel with a pool, close to the beach and stroller friendly. We need good food and shops within walking distance and a shortish transfer from the airport. Is that really too much to ask?

Anyway there you have it, that's why we can't choose somewhere. There are SO many decisions to be made before we can even think about booking somewhere up. Anyone who's ever travelled with an 11 month old baby...I'd LOVE to hear your advice.
